Butter Chicken or murgh makhani is a curry of chicken in a spiced tomato, butter and cream sauce. It is one of the most famous Indian dishes across the world. This butter chicken will go well with rice, chapati or naan (flatbread). For butter chicken, the gravy must be very smooth, so we would cook the ingredients for the gravy and then blend it.

Chicken – 500 gm
Onion(sliced) – 1/2(60 gm)
Tomato(sliced) – 5(400 gm)
Ginger & Garlic Paste – 1 tsp
Garlic Cloves – 3
Bay Leaf – 2
Cinnamon – 3
Cloves – 4
Cardamom – 4
Yogurt – 1/2 tbsp
Kashmiri Chilli Powder – 2 tsp
Cumin Powder – a pinch
Garam Masala – 1/4 tsp
Cashew Nuts – 18
Butter – 25 gm
Double Cream – 4 tbsp
Dry Fenugreek Leaves (Kasuri Methi)
Lime Juice – 1/2 tbsp
Oil – 4 1/2 tbsp
Salt – 1 1/2 tsp
Sugar – 1/2 tsp
Water – 1 1/2 cup


To make the garam masala, dry roast and grind 1 star anise, 2 bay leaf, 6 cloves, 6 cardamom and 2 inch cinnamon sticks.


To marinate the chicken, add cleaned chicken pieces into a bowl. Add 1/2 tbsp of lime juice, 1/2 tsp of salt, 1 tsp of kashmiri chilli powder, a pinch of garam masala, 1 tsp of ginger & garlic paste, 1/2 tbsp of curd(yogurt),1 tbsp of oil and mix it well. Cover and keep it aside for 30 minutes.

To make the butter chicken gravy, add 1 tbsp of oil into a pot. Add 2 bay leaf, 3 cinnamon sticks, 4 cloves, 4 cardamom and mix.

Add the sliced onion and tomatoes, 3 garlic cloves, 18 cashewnuts and mix.

Add a pinch of cumin powder, 1 tsp of kashmiri chilli powder and 1 tsp of salt, a small cube of butter and mix.
Add 1 1/2 cup of water and mix. Let it boil.
Once the mixture starts boiling, close and cook it on a medium heat for 20 minutes.

After 20 minutes, open and mix. Let it cook for 5 more minutes on a high heat.

The gravy mixture is ready, take it off from the stove. Let it cool.

Transfer the cooled mixture into a bowl and blend it.
Sieve the mixture. Gravy for the butter chicken is ready.
To pan fry the chicken, add 2 1/2 tbsp of oil into a pan. Add the marinated chicken pieces. At this time stove must be on a high heat.

After 2 minutes flip the chicken pieces. At this time, reduce the heat to medium-high.

Once the chicken is cooked well, take it off from the stove.

Place a pot on the stove and add the prepared gravy. Add 2 small cubes of butter. At this time, stove must be on a medium heat.

Add a pinch of garam masala, cooked chicken pieces and mix. Let it boil.

Add dry fenugreek leaves and mix.

Add 4 tbsp of double cream and mix.

Add 1/2 tsp of sugar and mix.

Add 1 cube of butter, close and take it off from the stove.
Butter Chicken is ready to serve.
